Blueberry Lemon Bread





My daughter Sophia says she wants to be a baker when she grows up. She loves to watch shows where they bake cakes and cookies and constantly asks me if we can bake them too.

So because of that I recently decided to make a Pinterest board with easy baking recipes to try with her.

One of the ones I found was a Blueberry Lemon cake. There were extra ingredients I didn't care for so I changed it, combined with other recipes I've used, and made my own not knowing if it would come out good or not. Well, it turned out to be amazing!

Sophia and I will be baking it together one of these days and for many days there after - it's definitely a family favorite now!

Blueberry Lemon Bread


Ingredients:

1 1/2 cups fresh blueberries

1 lemon

1 egg

1 1/2 cups all-purpose flour

1 tsp baking powder

1/3 granulated sugar

1/2 salt

1 tsp vanilla extract

1/3 unsalted butter

1/2 cup milk


Instructions:

1.Preheat oven to 350F. Lightly grease a 9x5- inch loaf pan with butter.


2. In a large mixing bowl, combine the dry ingredients including flour, baking powder, sugar, and salt. Whisk together until evenly distributed and set aside.


3. In a medium mixing bowl, whisk well to combine the wet ingredients including milk, butter, egg, vanilla extract, and lemon juice from lemon.


4. Pour the wet ingredients into the dry ingredients and mix together using a rubber spatula until just combined and no dry ingredients are visible. Do not overmix (overmixing will make the bread denser and firmer). Fold in 1 cup of blueberries until evenly mixed.


5. Pour the batter into the prepared loaf pan.


6. Bake for 55 minutes until golden brown and a toothpick inserted into the center of the cake comes out clean. Let cool for 10-15 minutes, then invert to remove the loaf.


7. Serve warm or at room temperature. Enjoy!
